Sake (rice wine) is made with rice malt.

Rice malt contains lots of vitamins, increases umami (savoriness) of ingredients and improves your immune system by affecting the intestinal environment.

Sake lees can be eaten without being cooked.


Dissolving sake lees in boiling water and adding some sugar in it, another type of amazake is made.


Compared with amazake made from rice malt, the one from sake lees contains a small amount of alcohol. Through the process of making sake, water soluble nutrients are lost but yeast and other fermenting substances are included.

Many people have introduced the recipes on the web.


Some were fried as they were or with Nori (edible seaweed) in batter made of water and rice flour, others were fried coated with bread crumbs on the batter.


The outside of the freshly fried sake lees is crunch while the inside is soft like melty cheese.
