With a lots of fruits, I made Chirashi Sushi (scattered sushi). Vinegar rice usually goes well with sweet and sour fruits. 

It was successful to add some mint to increase the freshness of the aroma and taste. On the other hand, the whole taste of my dish was a bit more sour than I expected. While the sweetness of apple and mango was very nice, grapefruit was a little bit bitter and very sour. 

Probably, beans I included to increase the amount of protein in my meal should have been cooked sweeter with some sugar to make the sour taste milder. Alternatively, Koya Tofu (freeze-dried tofu) or Age (deep-fried tofu) seasoned with sugar and soy sauce should have been added.
