Only one green pepper that grew in a planter was made Nuka-zuke (rice bran pickles). Currently another two peppers are growing though they are still small.


My Nuka-doko is 19 month old. Vegetables are pickled in the Nuka-doko (rice bran bed).

In the rice bran bed, some bacteria need oxygen while others do not. To keep a good balance of the bacterial flora, it is important to stir the bed once or twice a day, especially in a warm environment.

Actually, however, it is ok to neglect it for a few days when refrigerated. When there is nothing to be pickled, I often keep it in the refrigerator and do not stir it. In this shoddy way though, the Nuka-doko works very well. My Nukazuke is really delicious. 

In the rice bran bed, an iron scoop are buried. Probably because of the scoop, the rice bran contains a lot of iron and the color is dark. Nevertheless, the color of vegetables pickled with the gray rice bran are clear and beautiful.
